Following the successful launch Ryky's first knife made by Sakai Takayuki, customers wanted more. Customers wanted a Damascus cladded stainless steel blade, with hardness close to the blue #2 version. After evaluating feedback and comments from customers, this VG10 version is the result. 


After years of testing every knife he can get his hands on, this particular profile is still one of his favourites. This profile took over a year of designing and redesigning before the final version was approved. By increasing the spine thickness and height above the knife’s “belly”, this VG10 version feels slightly more substantial and robust during use, while the 2.5mm spine thickness gives the blade added stiffness.

Still considered ultralight at only 160 grams (w/ teak handle) and with a profile by Ryky’s spec, this knife will be appreciated by home and professional chefs, as well as knife enthusiasts.

On top of everything, Ryky was able to have these knives made by one of the most famous stainless steel knife makers in Tsubame-Sanjo, Japan.

Care:

Wash and dry with a soft sponge, and safely store after use. Avoid cutting into bones, frozen foods, hard fruit pits.

Cutting Surface:

Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.

Care

Great Knife

I'm a home cook and have been using this knife for a month or so now. Before this, I had only used 210mm Gyuto's. Initially the 240mm felt big and a little intimidating but I quickly got used to the size and it has become my "go to" knife in the kitchen. It breezes through things like butternut squash way better than my other knives. It comes sharp out of the box and with VG 10 steel and the ebony handle, I find it easy to look after. Really happy with it!

Very nice and very sharp

Simply wow!
Extremely sharp out of the box and gorgeous to look at up close. The handle is longer and far more comfortable than I would have guessed and I really like the knife blade balance. A great price for a great knife. Nimble when cutting and this is a good length for home. I am recommending to my friends who might want to get into Japanese knives. Nice job Ryky. Great knife for the money! Beautiful geometry and sharp out of the box

Sadly I’ve yet to use it in a profesional kitchen, mostly looking forward to portion fish or chop larger vegetables! Came very sharp out of the box and a joy to use. But the real test comes when I move it out of the home kitchen.

Thanks to the pointed edge and light steel I feel comfortable doing fine work even though it’s a 240mm knife. Feels like a good all around knife! Will probably use something cheaper and less beautiful for some tasks, but so far I’m feeling good about the purchase.
