The Kitayama #8000 is a highly refined polishing whetstone that outperforms many other pricier whetstones in the same grit range.  Many 8000 grit whetstones tend to feel a bit dull, and soft, but this whetstone still retains enough feedback to allow the sharpening to know what is happen with the knife.  The mirror-like finish quality is perfect for everyday and high-end commercial kitchen use.

How to use:

Do not soak this whetstone. Simply apply water on the surface when ready to use. Rinse and wipe dry with a hand towel when done, and allow air dry at room temp. Do not leave in water.

How to clean:

If the stone’s performance is slowing down, or seems to be diminishing, you can clean using a rust eraser, nagura stone, dressing stone, or a flattening plate. Be sure to clean the entire surface of the whetstone when using any of these methods to ensure even wear of the whetstone’s surface.

Kitayama #8000

This stone produces nice feel and feedback when polishing. I have no complaints so far and quite like it. I won’t comment too much as this is my first high grit stone and I am unable to compare it against other polishing stones.

In terms of price, i was also comparing another shop selling this same stone. Burrfection was selling the stone at $3 cheaper so I went with them. It was only after I received my order from Burrfection where I realized that the Kitayama 8000 from the OTHER store was significantly thicker and comes with wooden base and nagura stone. Much better value from the other shop. ( photo comparisons attached) This is why my review for this product is 3 stars.

Otherwise, Burrfection has been a great store to purchase from. I am a repeat customer and have never had any issues. Intl shipping is fast too.

Hi Shaun, thank you for your review. We'd like to point out that the thickness (and all dimensions) of this stone is the same as the version with base attached. Whenever possible, we procure stones without their plastic or wooden base as we recommend the use of whetstone holders.
